Spice up your week with Middle Eastern-inspired chicken drumsticks and a flavorful tomato salad.
Ingredients:
  • 10.00 gm ground cumin
  • 20.00 ml sumac
  • 1/2 tsp ground cardamom
  • 1 tsp ground turmeric
  • 2 garlic cloves, crushed
  • 72.80 gm extra virgin olive oil
  • 40.00 ml fresh flat-leaf parsley leaves, chopped
  • 8 chicken drumsticks
  • 125.00 ml hummus, to serve
  • 4 Lebanese bread rounds, to serve
  • 250.00 ml fresh flat-leaf parsley leaves
  • 125.00 ml fresh coriander leaves
  • 5 vine-ripened tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 2.50 gm ground cumin
Instructions:
  • In a large bowl, mix together cumin, sumac, cardamom, turmeric, garlic, oil, and parsley. Add the chicken and toss to coat evenly. Cover and refrigerate for 20 minutes.
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with baking paper.
  • Lay the chicken on the baking tray and bake for 40 minutes, or until it turns golden and fully cooked.
  • Prepare the Spiced Tomato Salad: Combine parsley, coriander, tomato, onion, cumin, vinegar, and oil in a bowl, then toss to mix thoroughly.
  • Transfer the hummus to a microwave-safe dish and heat on HIGH for 40 seconds or until warm. Serve alongside chicken, tomato salad, and bread.
