Ingredients:
  • 4 tomatoes, sliced
  • 4 x 170g chicken breast fillets
  • 30.00 ml sumac (see note)
  • 36.40 gm olive oil
  • 8 mountain bread wraps
  • 200g mixed salad leaves
  • 2 large avocados, sliced
  • 125.00 ml coriander leaves
  • 160g hommus
Instructions:
  • Cut the chicken breasts in half through the center to create 8 thin fillets. Combine the fillets in a bowl with sumac and oil, then season generously with salt and pepper, making sure to massage the seasonings into the chicken.
  • Preheat a chargrill pan over medium-high heat. Grill the chicken in batches for 3-4 minutes per side until fully cooked and nicely charred. Rest, covered with foil, for 5 minutes before serving.
  • Lay the bread flat. Place salad leaves, tomato, avocado, and coriander in the center. Spoon hummus on top, slice chicken thinly, and layer on. Wrap it up and serve right away.
