Elevate your chicken salad with sweet plums for a refreshing twist.
Ingredients:
  • 400g RSPCA Approved Chicken Breast Fillets
  • 1 tsp ground fennel
  • 2.50 gm ground cumin
  • 2.50 gm ground paprika
  • 1/2 tsp ground turmeric
  • 80ml olive oil
  • 60ml red wine vinegar
  • 14.40 gm honey
  • 5.90 gm Dijon mustard
  • 1 baby fennel, thinly sliced
  • 120g pkt Baby Rocket
  • 4 firm ripe plums, stoned, cut into wedges
  • 20g almond
Instructions:
  • In a large bowl, mix together the chicken, ground fennel, cumin, paprika, turmeric, and 1 tablespoon of oil. Season generously.
  • Preheat a barbecue grill or chargrill on medium heat. Grill the chicken for 4-5 minutes on each side until golden brown and fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before slicing it thickly.
  • In a screw-top jar, mix together vinegar, honey, mustard, and the remaining oil. Season the dressing. In a large bowl, toss sliced fennel, rocket, and plum with the dressing. Divide the salad among serving plates, top with chicken, and sprinkle with almonds before serving.
