Elevate your holiday ham with this spectacular glaze!
Ingredients:
  • 8kg cooked leg ham
  • 8 star anise
  • 250g jar plum jam
  • 82.50 ml shao hsing Chinese cooking wine (see note)
  • 42.00 gm soy sauce
  • 45.00 gm brown sugar
  • 2cm piece fresh ginger, sliced
  • 1/4 tsp five-spice powder
Instructions:
  • Preheat oven to 180°C/160°C fan-forced. Cut 8cm from the shank to remove the ham rind. Score the fat diagonally at 3cm intervals to create a diamond pattern. Secure star anise with toothpicks, using two for each, onto the ham. Wrap the shank end in foil before baking.
  • In a saucepan over medium-high heat, combine jam, wine, soy sauce, sugar, ginger, and five spice. Cook and stir for 5 minutes until the jam melts. Bring to a boil, then reduce heat to medium and simmer for another 5 minutes until slightly thickened. Remove from heat, let it stand for 10 minutes, then strain through a fine sieve into a heatproof jug, discarding ginger.
  • Place the ham on a wire rack in a roasting pan. Pour boiling water into the pan until it reaches 2cm up the sides. Brush the ham with a quarter of the jam mixture. Bake the ham for 1 hour and 30 minutes, basting with the remaining jam mixture every 20 minutes, until golden. Remove and discard toothpicks and foil before serving.
