Sugar and spices caramelize for a delectable, sticky dish.
Ingredients:
  • Vegetable oil, to grease
  • Steamed jasmine rice, to serve
  • 125ml (1/2 cup) honey
  • 80ml (1/3 cup) tomato sauce
  • 60ml (1/4 cup) soy sauce
  • 43.20 gm hoisin sauce
  • 3 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 1-1 1/2 tsp chilli powder
  • 8 (about 1.2kg) pork spare rib rashes
  • Mixed salad leaves, to serve
Instructions:
  • In a small bowl, blend honey, tomato sauce, soy sauce, hoisin sauce, garlic, ginger, oil, and chili powder.
  • In a large shallow glass or ceramic dish, coat the ribs evenly with the honey mixture. Cover with plastic wrap and refrigerate for 6 hours or overnight, flipping occasionally to enhance the flavors.
  • Preheat your oven to 210°C. Line a baking dish with foil and add water to cover the base to prevent excess marinade from smoking. Grease a wire rack with oil and place it in the baking dish over the water. Arrange the ribs in a single layer on the wire rack, setting aside the marinade for later use.
  • In a small saucepan, simmer the reserved marinade over medium heat until it thickens slightly, about 1-2 minutes.
  • Bake the ribs in a preheated oven, periodically turning and basting with the marinade, until they are golden brown, sticky, and cooked through, about 40-50 minutes. Remove from the oven.
  • Spoon the rice onto individual plates. Arrange the spicy pork spare ribs on top and serve with a side of mixed salad leaves.
