Spicy pork and zoodle salad - a quick and flavorful midweek favorite!
Ingredients:
  • 36.80 gm avocado oil or olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp Chinese five spice
  • 500g Pork Mince
  • 42.00 gm soy sauce
  • 24.40 gm fish sauce
  • 250g pkt Zucchini Noodles
  • 2 carrots, peeled, cut into long matchsticks
  • 100g pkt Organic Australian Baby Leaf Blend
  • 250.00 ml coriander sprigs
  • 12.00 gm sesame seeds, toasted
  • Lime wedges, to serve
Instructions:
  • In a large frying pan, heat half of the oil over medium-high heat. Add onion and garlic, cook until onion softens. Sprinkle in five spice, cook until fragrant. Add pork, stir and cook until done. Mix in soy sauce and fish sauce until combined.
  • Cook the zucchini noodles according to the package instructions, then mix them in a bowl with the carrot and the rest of the oil.
  • Plate the zucchini mixture and salad leaves. Add the pork mixture on top. Season, sprinkle with coriander and sesame seeds, and serve with lime wedges.
