Crispy Japanese pork and leek dumplings filled with flavorful spiced pork, served with a delectable dipping sauce.
Ingredients:
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 0.5 teaspoon chili-garlic sauce
  • 2 cups ground pork
  • 0.5 cup finely chopped leeks, white and light green parts only
  • 2 medium mushrooms, finely chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon Japanese rice wine
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 (16 ounce) packages dumpling wrappers
  • 4 tablespoons vegetable oil for frying
Instructions:
  • In a small mixing bowl, mix together soy sauce, rice vinegar, sesame oil, and chili sauce to create a delicious dipping sauce. Keep aside for later.
  • In a large bowl, mix pork, leeks, mushrooms, garlic, rice wine, soy sauce, ginger, sesame oil, salt, and pepper until thoroughly combined.
  • Place 2 tablespoons of the pork mixture on one half of a round dumpling wrapper, leaving a small space at the edge. Moisten the open edge with water using a brush or your finger. Fold the wrapper over and press down to seal, creating a half moon shape. Use a fork to crimp the edges and seal tightly. Repeat with the remaining wrappers to make all the dumplings.
  • In a large nonstick pan over medium heat, warm 1 tablespoon of oil. Add the dumplings in a single layer without overcrowding. Cook for 3 to 4 minutes until golden brown.
  • Pour 4 tablespoons of water into the pan without flipping the dumplings. Cover immediately and steam until the water evaporates and the meat inside is cooked, for about 3 to 4 minutes.
  • Uncover the pan and add the remaining tablespoon of oil to let the dumplings crisp on one side; do not flip them as they should be crispy on one side and steamed on the other. Transfer the dumplings to a plate with the browned side facing up. Repeat with the rest of the dumplings and additional oil if needed. Serve with the dipping sauce.
