Japanese gyozas are a delightful twist on dumplings, with a thin, sticky pastry. Our easy recipe guides you through creating the perfect crispy base. Ingredients:
  • 150g pork mince
  • 250.00 ml finely shredded wombok (Chinese cabbage)
  • 2 green onions, trimmed, finely chopped
  • 1 garlic clove, crushed
  • 10.60 gm Japanese soy sauce
  • 2 tsp sake
  • 1 tsp sesame oil
  • 2.50 gm caster sugar
  • Pinch of ground white pepper
  • 24 gyoza or gowgee wrappers
  • 60ml water
  • Japanese soy sauce, to serve
Instructions:
  • In a medium bowl, mix together the pork, wombok, green onion, garlic, soy sauce, sake, sesame oil, caster sugar, and pepper until well combined.
  • Start by laying a gyoza wrapper on a clean work surface. Add a generous teaspoon of pork mixture in the center. Dab a little water on the edge, then use your fingers to pleat the edge 4-5 times. Fold it over to seal the filling inside. Transfer to a plate and continue the process with the rest of the pork mixture and wrappers.
  • 1. Heat peanut oil in a large frying pan over high heat until smoking. Remove from heat. Place dumplings on the pan's base. Return to heat and cook for 2 minutes until dumplings' base is golden. Sprinkle water evenly over gyozas. Cover and cook for 3-4 minutes until gyozas are cooked through and water evaporates. Set aside for 2 minutes before serving.
  • Transfer to a beautiful serving platter and enjoy with a side of soy sauce.
