Gyoza (Japanese dumplings)

Serve up delicious pork mince dumplings that will delight all ages.
Ingredients:
  • 400g lean pork mince
  • 250.00 ml finely shredded cabbage (see note)
  • 2.00 tsp sesame oil
  • 21.00 gm soy sauce
  • 3cm piece ginger, peeled, grated
  • 30 gow gee wrappers
  • 18.40 gm vegetable oil
  • sliced green onions, to serve
  • 82.50 ml teriyaki sauce
Instructions:
  • Combine mince, cabbage, sesame oil, soy sauce, ginger, and garlic in a bowl. Mix well. Lay out wrappers on a work surface. Fill each wrapper with 1 heaped teaspoon of the mince mixture. Moisten edges with cold water. Fold wrappers over the filling and press to seal.
  • 1. In a large frypan, heat half of the vegetable oil over high heat, then remove from heat and reduce to medium-high. 2. Arrange half of the dumplings in the pan and cook for 1 to 2 minutes until the bases are browned. 3. Add 1/2 cup of hot water, cover with a lid, and cook for 4 to 5 minutes, adding more water if needed. 4. Remove from heat, uncover, and let stand for 1 to 2 minutes until dumplings come away easily. 5. Repeat the process with the remaining oil and dumplings.
  • While waiting, prepare the dipping sauce by combining teriyaki sauce and sesame oil in a bowl. Stir well to combine. Serve the dumplings with the dipping sauce and onion.
