Chicken gyozas

Create delicious homemade Japanese dumplings.
Ingredients:
  • 300g chicken mince
  • 3cm piece ginger, finely grated
  • 80g sliced water chestnuts, drained, finely chopped
  • 125.00 ml Chinese cabbage, finely shredded
  • 2 green onions, finely chopped
  • 62.50 ml coriander leaves, finely chopped
  • 42.00 gm light soy sauce, plus extra, to serve
  • 1 tsp sesame oil
  • 2.50 gm caster sugar
  • Pinch white pepper
  • 40 gow gee wrappers
  • 9.20 gm peanut oil
  • Pickled ginger, to serve
  • Cucumber ribbons, to serve
  • Coriander sprigs, to serve
  • Brown rice, to serve
Instructions:
  • Combine chicken mince, garlic, ginger, water chestnuts, cabbage, green onions, coriander, light soy sauce, sesame oil, sugar, and pepper in a large bowl.
  • Place a gyoza wrapper on a clean work surface and generously spoon chicken mixture onto the center of the wrapper.
  • Moisten the edge lightly with water. Pleat the edge 4-5 times using your fingertips, then fold over to enclose the filling. Place on a plate and repeat with the remaining mixture and wrappers.
  • In a large non-stick frypan, heat peanut oil over high heat until smoking. Place the dumplings in the pan, cook until the base is golden for about 2 minutes, then sprinkle 2 tablespoons of water over them. Cover and cook for 3-4 minutes until dumplings are cooked through and water has evaporated. Rest for 2 minutes before serving. Repeat if necessary.
  • Arrange a platter of gyozas, accompanied by a side of extra light soy sauce, pickled ginger, cucumber ribbons, and fresh coriander sprigs. Serve with brown rice on the side, if preferred.
