Pecan dumplings with golden syrup sauce

Ingredients:
  • 150g (1 cup) self-raising flour
  • 40g (2 tbsp) butter, chilled, cubed
  • 45g (1/3 cup) pecan nuts, roughly chopped
  • 41.20 gm milk
  • 1 egg, lightly whisked
  • 120g (2/3 cup, lightly packed) brown sugar
  • 30g (1 1/2 tbsp) butter, extra
  • 500ml (2 cups) water
  • 60ml (1/4 cup) golden syrup
  • Double cream, to serve
Instructions:
  • In a large bowl, sift the flour. Use your fingertips to rub in the butter until the mixture looks like breadcrumbs. Add pecan nuts and stir. Create a well in the center and pour in milk and egg. Mix with a round-bladed knife until well combined. Divide the mixture into 8 equal portions.
  • In a large saucepan, combine sugar, extra butter, water, and golden syrup. Stir over low heat until sugar dissolves. Increase heat to medium-high and bring to a boil. Spoon dumpling portions over the sauce mixture.
  • Simmer gently for 6-7 minutes with the lid on until a skewer inserted into the center of the dumplings comes out clean. Coat dumplings in sauce, then ladle into bowls, top with cream, and serve hot.
