Pecan Pancakes with Fudge Syrup

Indulgent pecan-filled chocolate pancakes with luscious fudge syrup.
Ingredients:
  • 1 cup maple-flavored or real maple syrup
  • 1/4 cup hot fudge topping
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons packed brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup chopped pecans
  • 1 1/2 cups buttermilk
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
Instructions:
  • Warm the syrup and fudge topping in a 1-quart nonstick saucepan over medium heat until smooth, stirring constantly. Keep it warm.
  • Mix flour, brown sugar, baking powder, baking soda, salt, and pecans in a medium bowl. Stir in buttermilk, eggs, and butter with a spoon or wire whisk until just blended.
  • Preheat griddle or skillet to 375°F and lightly grease with butter, vegetable oil, or cooking spray. Pour 1/4 cup of batter for each pancake onto the hot griddle. Cook until bubbles form on top and edges are dry, then flip and cook until golden brown. Serve with warm syrup.
