Cozy up with these delicious, autumn-inspired pumpkin pancakes.
Ingredients:
  • 1.5 cups whole wheat pastry flour
  • 0.5 cup multigrain hot cereal (uncooked)
  • 1.5 teaspoons baking powder
  • 2 eggs
  • 1 cup milk
  • 0.75 cup pureed pumpkin
  • 0.75 cup plain yogurt
  • 2 teaspoons vanilla extract
  • 0.33333334326744 cup white sugar
  • 0.5 teaspoon salt
  • 0.75 cup finely chopped pecans
Instructions:
  • Mix together whole wheat pastry flour, multigrain hot cereal, and baking powder in a bowl.
  • Whisk together eggs, milk, pumpkin, yogurt, vanilla extract, sugar, and salt in a separate bowl. Gently blend wet mixture into dry ingredients, taking care not to overmix. Stir in pecans.
  • Preheat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop 1/4 cup of batter for each pancake onto the griddle, watching for bubbles to form. Once the edges are dry and a popped bubble holds its shape, flip the pancakes and cook until golden brown. Repeat with remaining batter, adding more oil if needed. Keep pancakes warm by stacking on a plate or in the oven at 300°F (150°C) on a cooling rack over a baking sheet. Serve hot.
