Ingredients:
  • 1 cup cornmeal
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon ground cloves
  • 1.25 cups milk, or more as needed
  • 1 cup canned pumpkin
  • 2 tablespoons vegetable oil
  • 2 tablespoons oil, divided, or as needed
Instructions:
  • In a large bowl, whisk together flour, cornmeal, brown sugar, baking powder, salt, cinnamon, and cloves. In a separate bowl, beat together milk, pumpkin, eggs, 2 tablespoons of vegetable oil, and vanilla extract. Combine the milk mixture with the flour mixture and stir until the batter is well-combined.
  • Heat 1 tablespoon of oil on a griddle over medium-high heat. Spoon batter onto the griddle, cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until browned, 2-3 minutes. Repeat with remaining batter.
