Irresistible pumpkin whoopie pies with a sweet filling, a must-have for the holiday table.
Ingredients:
  • 2 cups packed brown sugar
  • 1 cup vegetable oil
  • 1.5 cups solid pack pumpkin puree
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1.5 tablespoons ground cinnamon
  • 0.5 tablespoon ground ginger
  • 0.5 tablespoon ground cloves
  • 1 egg white
  • 2 tablespoons milk
  • 2 cups confectioners' sugar, divided
  • 0.75 cup shortening
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C) and give your baking sheets a light greasing.
  • Prepare the cookie dough by blending brown sugar and oil together in a bowl. Incorporate pumpkin and eggs, mixing thoroughly. In a separate bowl, combine flour, cinnamon, ginger, cloves, salt, baking powder, baking soda, and vanilla. Gently fold the dry ingredients into the wet mixture until well combined.
  • Spoon heaping teaspoons of dough onto the prepared baking sheets.
  • Place the cookies in the preheated oven and bake for 10 to 12 minutes, then set aside to cool while preparing the filling.
  • Prepare the whoopie pie filling: In a bowl, whip egg white, incorporate milk, and vanilla, then add 1 cup confectioners' sugar. Mix thoroughly before adding shortening and the remaining 1 cup of confectioners' sugar. Beat until fluffy and light.
  • Once the cookies have cooled, sandwich together two cookies with a delicious whoopie pie filling.
