Indulge in autumn with pumpkin cookies topped with caramel frosting, walnuts, and raisins.
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 pinch ground cinnamon, or to taste
  • 1 pinch ground nutmeg, or to taste
  • 2.5 cups all-purpose flour
  • 0.5 cup raisins
  • 0.5 cup brown sugar
  • 4 tablespoons milk
  • 3 tablespoons unsalted butter
  • 1 cup powdered sugar
  • 0.75 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C) to achieve the perfect cooking temperature.
  • In a bowl, use an electric mixer to blend butter and brown sugar until creamy. Mix in pumpkin and egg. Add baking soda, baking powder, vanilla extract, salt, cinnamon, and nutmeg. Stir in flour, then fold in walnuts and raisins.
  • Place dollops of dough 2 inches apart on ungreased baking sheets.
  • Place each sheet in the oven on the bottom rack and bake for 6 to 7 minutes. Move the sheet to the top rack and bake for an additional 6 to 7 minutes until the edges are golden. Repeat with the remaining cookie sheets. Cool the cookies on the sheets for 5 minutes, then transfer to a cooling rack to fully cool.
  • As the cookies cool, gently melt brown sugar, milk, and butter in a medium pot over low heat until a smooth mixture forms. Once it reaches a boil, continue to cook while stirring for 2 minutes. Remove from heat and let cool for 3 to 10 minutes to achieve the desired thickness for frosting the cookies.
  • Mix in powdered sugar and vanilla extract to the frosting, ensuring thorough incorporation, then generously coat the cooled cookies. Let the cookies set for 1 to 2 hours before assembling them.
