Quick and easy pumpkin cookies with soft, cake-like texture and delicious caramel icing.
Ingredients:
  • 2 cups shortening
  • 2 cups white sugar
  • 2 cups canned pumpkin
  • 2 eggs
  • 2 teaspoons baking soda
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • 6 tablespoons butter
  • 8 tablespoons milk
  • 2 cups confectioners' sugar
  • 1.5 teaspoons vanilla extract
  • 1 cup packed brown sugar
Instructions:
  • In a mixing bowl, blend shortening, white sugar, and pumpkin until creamy. Incorporate eggs and mix thoroughly. Combine baking soda, ground cinnamon, salt, and flour; sift together. Gently fold into the pumpkin mixture until fully combined.
  • Spoon dollops of batter onto a baking sheet. Bake at 350°F (175°C) for 10 minutes.
  • For the frosting: Melt together butter, milk, and brown sugar until smooth. Let it cool, then mix in confectioners' sugar and vanilla. Drizzle the frosting over freshly baked cookies.
