Irresistibly chewy pumpkin oatmeal cookies with customizable mix-ins like chocolate chips or nuts instead of raisins.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup quick cooking oats
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 0.5 cup canned pumpkin puree
  • 1 cup raisins
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Mix together flour, oats, baking soda, cinnamon, and salt; keep it to the side for now.
  • In a large bowl, blend the butter, brown sugar, and white sugar until smooth. Add the egg and vanilla, followed by the pumpkin puree. Slowly incorporate the dry ingredients until fully combined. Fold in the raisins. Spoon rounded portions onto ungreased cookie sheets.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
