Soft pumpkin cookies with irresistible penuche frosting made with brown sugar, milk, and powdered sugar - a sweet, candy-like treat!
Ingredients:
  • 0.25 cup milk
  • 1 cup shortening
  • 0.5 cup packed brown sugar
  • 0.5 cup white sugar
  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 3 tablespoons butter
  • 2 cups confectioners' sugar
Instructions:
  • Preheat your oven to 350°F (175°C) and grease your cookie sheets.
  • Prepare the cookie dough by combining shortening, brown sugar, and white sugar in a large bowl. Add pumpkin, egg, and vanilla. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt, then mix it into the creamy mixture. Fold in walnuts and spoon heaping amounts of dough onto baking sheets.
  • After baking in the preheated oven for 10 to 12 minutes, allow the treats to cool on wire racks.
  • To make the frosting, melt 3 tablespoons of butter with 1/2 cup of brown sugar in a small saucepan over medium heat. Bring to a boil and simmer for 1 minute until slightly thickened. Remove from heat and allow it to cool for about 10 minutes before using.
  • Mix in the milk until the mixture is smooth. Slowly incorporate 2 cups of confectioners' sugar until the frosting reaches your desired thickness. Spread onto cooled cookies.
