Fall-inspired pumpkin cookies with a rich, cake-like texture and a delightful maple icing.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 0.5 cup shortening
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 0.5 cup unsalted butter, at room temperature
  • 0.25 cup maple syrup
  • 2 tablespoons pumpkin puree
  • 1 (16 ounce) package powdered sugar
  • 1 drop orange gel food coloring, or as desired
  • 1 tablespoon black sprinkles, or as desired
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and lay out 2 baking sheets with parchment paper.
  • Combine flour, baking powder, baking soda, salt, and pumpkin pie spice by sifting them together in a large bowl. Set aside.
  • In a separate large bowl, blend shortening and brown sugar until creamy using an electric mixer for about 1 minute. Mix in pumpkin, egg, and vanilla extract until combined. Gradually add in half of the flour mixture, mix, then add the rest and mix thoroughly.
  • Use a tablespoon to scoop dough onto the baking sheets, making sure to leave 2 inches of space between each scoop.
  • Bake in the preheated oven for about 14 minutes until lightly browned at the edges, rotating baking sheets halfway through for even cooking.
  • While the cookies are baking, in a medium bowl, cream together the butter and maple syrup until smooth using an electric mixer. Stir in the pumpkin, pumpkin pie spice, and vanilla extract until well combined. Gradually add powdered sugar, beating until fluffy. Mix in food coloring until evenly incorporated. Set the icing aside.
  • Take the cookies out of the oven and allow them to cool on the baking sheets for 5 minutes. Then, transfer them to a wire rack to cool completely for 20 to 30 minutes. Finish by piping or spreading icing onto the cookies and decorating them with sprinkles as you like.
