Irresistible pumpkin cookies loaded with warm spices and gooey butterscotch. Simply divine!
Ingredients:
  • 0.5 cup shortening
  • 1 cup pumpkin puree
  • 1 teaspoon baking powder
  • 1.5 cups butterscotch chips
Instructions:
  • Preheat oven to 350°F (175°C) and generously grease cookie sheets.
  • Combine shortening and sugar in a bowl until creamy. Add pumpkin and vanilla. In a separate bowl, sift together flour, salt, baking soda, baking powder, and cinnamon, then mix into the creamy mixture. Stir in butterscotch chips. Drop teaspoonfuls of dough onto cookie sheets.
  • Bake for 8 to 10 minutes until golden brown. Let cookies rest for a minute on sheets before transferring to wire racks to cool.
