Indulgent beef ramen with savory broth, noodles, and comforting flavors. Traditional dish with Chinese origins. Various styles based on broth flavor - shoyu, shio, miso, and tonkotsu. Basic ingredients are beef stock, shiitake mushrooms, soy sauce, white miso paste, and ramen noodles. Versatile meal for any time of day, pairs well with gyoza and tsukemono.
Ingredients:
  • 600g beef chuck steak, fat trimmed, cut into 4cm pieces
  • 65.63 gm salt-reduced soy sauce , plus 2 tbsp extra
  • 48.80 gm oyster sauce
  • 32.00 gm brown sugar
  • 2 garlic cloves, finely chopped
  • 4cm piece ginger, sliced
  • 2 star anise
  • 2L (8 cups) salt-reduced beef stock
  • 75.00 gm white miso paste
  • 200g shiitake mushrooms, sliced
  • 4 free-range eggs
  • 270g ramen noodles
  • Sesame seeds, to serve
  • Coriander sprigs, to serve
  • Sliced red chilli, to serve
  • Sriracha sauce, to serve
Instructions:
  • Place beef in a medium saucepan with 1/4 cup soy sauce, oyster sauce, brown sugar, garlic, ginger, star anise, and half of the beef stock. Bring to a boil, skimming impurities off the top, then simmer uncovered for 1 ¼ to 1 ½ hours until beef is tender and sauce is thickened. Drain most of the liquid, cover meat with foil to keep warm, then shred once cooled.
  • Combine the remaining beef stock, 1 cup (250ml) water, miso paste, remaining soy sauce, mushrooms, pak choy, and snow peas in a large saucepan. Cover and simmer over medium-low heat for 5 minutes until the pak choy and snow peas are tender.
  • In a medium saucepan of simmering water, gently cook the eggs for 4 to 5 minutes. Use a slotted spoon to transfer the eggs to a bowl of cold water. Once they are cool to the touch, peel and halve the eggs.
  • Cook noodles in the same pan of boiling water according to the packet instructions, then drain.
  • Distribute noodles into bowls, pour miso soup and vegetables over them. Top with beef mixture and eggs. Garnish with sesame seeds, coriander, chili, and Sriracha sauce to taste. Enjoy!
