Spicy beef ramen with sliced beef, curly noodles, shiitake mushrooms, edamame in zesty Sriracha broth.
Ingredients:
  • 2 cups water
  • 1 (3 ounce) package beef-flavored ramen noodles
  • 1 cup thinly sliced shiitake mushrooms
  • 0.5 cup frozen shelled edamame
  • 1 tablespoon reduced-sodium soy sauce
  • 2 teaspoons Sriracha sauce, or more to taste
  • 1 (4 ounce) beef top sirloin, thinly sliced
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • In a large saucepan, bring water to a rolling boil. Add ramen noodles along with the seasoning packet and stir for 1 minute. Toss in mushrooms, edamame, soy sauce, and Sriracha, then cook for an additional minute.
  • Sear sirloin until it is juicy and firms up, 1 to 2 minutes. Check for medium-rare doneness with an instant-read thermometer, aiming for 130 degrees F (54 degrees C).
  • Serve the piping hot soup in bowls and top it with fresh cilantro and an extra drizzle of Sriracha for added kick.
