Spicy beef fajitas

Satisfy your cravings with this flavorful Mexican dish featuring spicy beef and fresh guacamole in warm tortillas!
Ingredients:
  • 600g Beef Rump Steak, trimmed
  • 60ml lime juice
  • 45.50 gm olive oil
  • 2 tsp Mexican chilli powder
  • 1 garlic clove, crushed
  • 2 avocados, stoned, flesh removed
  • 20.00 ml finely chopped red onion
  • 1/2 tomato, finely chopped
  • 1 red capsicum, thinly sliced
  • 1 yellow capsicum, thinly sliced
  • 1 red onion, extra, halved, thinly sliced
  • 8 flour tortillas, warmed
  • 120g sour cream
  • Coriander sprigs, to serve
Instructions:
  • Lay the steak in a spacious glass or ceramic dish. In a small jug, mix 1 tablespoon of lime juice, 2 tablespoons of oil, chili powder, and garlic. Season with salt and pepper. Pour the marinade over the steak and evenly coat it. Cover and let it marinate for 10 minutes.
  • Prepare a tantalizing avocado mixture by gently mashing it in a bowl; then, blend in the rest of the lime juice, red onion, tomato, salt, and pepper, thoroughly stirring for a delicious harmony of flavors.
  • Preheat a sizzling-hot chargrill. Sear steak in batches for 2 minutes on each side for a perfect medium rare or until desired doneness. Place on a plate, cover with foil, and let it rest for 5 minutes. Slice thinly against the grain before serving.
  • Heat the remaining oil in a frying pan until shimmering. Add the combined capsicum and onion, cooking and stirring for 3 minutes until tender. Transfer to a plate.
  • Top tortillas with a flavorful mix of avocado, bell pepper, and onion, seasoned beef, a spoonful of sour cream, and fresh coriander sprigs before serving.
