Spice up dinner with savory beef fajitas!
Ingredients:
  • 550g Scotch fillet steaks, cut into thin strips
  • 30g packet Taco seasoning
  • 1 garlic clove, crushed
  • 1 red onion, thinly sliced
  • 1 yellow capsicum, or red capsicum, seeded, thinly sliced
  • 500ml beef stock
  • 2 tomatoes, finely chopped
  • 40.00 ml coarsely chopped coriander, plus extra sprigs to garnish
  • 21.00 gm lime juice, plus extra wedges, to serve, if desired
  • 4 burrito tortillas, warmed
  • Sour cream, to serve
Instructions:
  • Place the beef strips, taco seasoning, and garlic in a large resealable bag. Seal the bag and shake well to ensure everything is evenly coated.
  • In a large non-stick frying pan over medium-high heat, sear the beef in 1 tablespoon of oil for 1-2 minutes on each side until golden brown and fully cooked. Transfer to a plate and set aside.
  • Pour the rest of the oil into the pan and sauté the onion for 1 minute. Add the capsicum and cook, stirring for 2 minutes until slightly tender. Remove from the pan and set aside along with the beef.
  • Pour the stock into the pan and stir occasionally, letting it simmer for 10 minutes or until it reduces to 1/4 cup. Add back the beef, onion, and capsicum, mixing well to coat everything evenly. Remove the pan from the heat.
  • In a small bowl, mix together tomato, coriander, and lime juice. Season the mixture. Serve the tortillas with beef mixture, tomato salsa, and sour cream on top. Garnish with coriander sprigs and lime wedges, if preferred.
