Spicy beef strips on a salad with zesty Southwest dressing.
Ingredients:
  • 8 ounces beef steak, cut into thin strips
  • 2 teaspoons dry fajita seasoning
  • 1 tablespoon vegetable oil
  • 0.5 cup sliced red or green bell peppers
  • 0.33333334326744 cup sliced onion
  • 1 (11 ounce) package DOLE® Just Lettuce
  • 1 medium tomato, diced
  • 0.25 cup drained canned black beans
  • 0.25 cup sliced black olives
  • 0.25 cup shredded Cheddar cheese
  • Southwest Fiesta Dressing (recipe below)
Instructions:
  • Coat beef strips generously with flavorful fajita seasoning. Sear beef in oil in a spacious nonstick skillet over medium-high heat for 3 to 4 minutes.
  • Saute peppers and onions for 2 to 3 minutes more until crisp-tender.
  • Place a generous amount of lettuce on 2 large plates. Top with the flavorful beef mixture and artfully arrange tomatoes, beans, olives, and cheese on each plate. Drizzle with Southwest Fiesta Dressing to your liking. Store any leftovers in the refrigerator.
