Mini Baked Steak Burritos

Transform beef tip steak, beans, and cheese into mouthwatering fajita burritos with a convenient dinner kit.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 lb boneless beef sirloin tip steak, cut into thin bite-size strips
  • 1 package (12.5 oz) Old El Paso™ Fajita Dinner Kit
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 3 medium green onions, thinly sliced
  • 1 cup shredded Mexican cheese blend (4 oz)
Instructions:
  • Preheat oven to 400°F. Melt butter in a 10-inch nonstick skillet over medium heat. Add beef and sprinkle with seasoning mix from the dinner kit. Cook for 10-12 minutes, stirring occasionally, until beef reaches desired doneness; then drain. While the beef is cooking, heat refried beans in a microwaveable dish uncovered on High for 2 minutes, stirring once or twice.
  • Lay out the tortillas from the dinner kit and evenly distribute the beans on top, leaving a 1/4-inch border. Add a layer of beef, Cheddar cheese, and onions. Roll up the tortillas, tucking in the sides, and place them seam side down in an ungreased 13x9-inch (3-quart) glass baking dish. Pour over the fajita sauce from the dinner kit and sprinkle generously with Mexican cheese blend.
  • Bake for 15 to 20 minutes until the burritos are hot and the cheese is melted.
