Bake mini meat loaves in a muffin pan for quick cooking and perfect portions, sneak in veggies for a kid-friendly twist!
Ingredients:
  • 1.5 pounds lean ground beef
  • 0.75 cup crumbled blue cheese
  • 0.5 cup diced onion
  • 0.5 cup Italian bread crumbs
  • 0.5 cup chopped fresh spinach
  • 2 tablespoons Worcestershire sauce
Instructions:
  • Preheat your oven to 375°F (190°C) and generously grease a large muffin pan with cooking spray.
  • Mix together ground beef, tangy blue cheese, flavorful onion, crunchy bread crumbs, fresh spinach, eggs for binding, and Worcestershire sauce until thoroughly combined. Portion the meat mixture evenly into the muffin pan.
  • Bake in the preheated oven for approximately 30 minutes until the center is no longer pink. Use an instant-read thermometer to confirm the internal temperature reads at least 160 degrees F (70 degrees C).
