Create Steak Fajita Quesadillas for a fast and tasty meal using fajita ingredients.
Ingredients:
  • 2 tablespoons vegetable oil, divided
  • 0.5 onion, sliced
  • 0.5 green bell pepper, sliced
  • salt to taste
  • 4 flour tortillas
  • 0.5 pound cooked steak, cut into 1/4-inch thick pieces
  • 1 cup shredded Mexican cheese blend
Instructions:
  • In a 10-inch skillet over medium heat, sauté onions and green bell peppers in 2 teaspoons of oil until onions are softened, about 5 to 10 minutes. Season with salt and transfer to a bowl.
  • Coat one side of each tortilla with the remaining oil. Lay one tortilla, oiled side down, in the skillet. Spread half of the steak, onion mixture, and Mexican cheese on the tortilla. Top with the second tortilla, oiled side up, and press down gently to seal.
  • Cook the quesadilla over medium heat until the cheese has melted and the tortillas are golden brown, about 3 to 4 minutes on each side. Remove the quesadilla from the skillet and cut it into wedges. Repeat the process with the remaining ingredients to make the second quesadilla.
