Spicy shrimp, fajita veggies, and crispy tortillas make this shrimp quesadilla a Mexican delight!
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 jalapeno pepper, seeded and minced
  • 1 lime, juiced
  • 1 teaspoon vegetable oil, or as needed
  • 6 large flour tortillas
  • 3 cups shredded Mexican cheese blend, divided
Instructions:
  • In a large skillet over medium-high heat, sizzle 2 tablespoons of oil. Toss in onion and bell peppers, sauté until onion turns translucent and peppers become tender, about 6 to 8 minutes. Season with salt, cumin, and chili powder, mix well to coat the veggies.
  • Cook the shrimp until they are opaque and no longer pink in the center, which should take 3 to 5 minutes. Then, remove from the heat and mix in minced jalapeño and lime juice.
  • Preheat another skillet over medium heat and lightly brush it with 1 teaspoon oil. Add one tortilla to the skillet; spread 1/6 of the shrimp filling and 1/2 cup Mexican cheese blend on one side of the tortilla. Fold it in half and cook until golden brown on one side, for about 5 minutes. Flip and cook until golden brown on the other side, for 3 to 5 minutes. Repeat for the rest of the quesadillas.
