Zesty shrimp quesadillas with cilantro and lime for a delicious Mexican twist, great for any meal or snack!
Ingredients:
  • 0.25 (16 ounce) jar roasted red peppers, drained and minced
  • 2 tablespoons chopped fresh cilantro, or to taste
  • 2 small limes, juiced
  • 0.25 teaspoon chili powder
  • 8 large shrimp - peeled, deveined, and chopped into bite-sized pieces
  • 2 teaspoons olive oil
  • 0.25 small onion, minced
  • 4 (8 inch) flour tortillas
  • 0.5 cup shredded Mexican cheese blend
Instructions:
  • Mix together smoky roasted red peppers, fresh cilantro, zesty lime juice, and a hint of spicy chili powder in a shallow dish. Add juicy chopped shrimp to the citrusy marinade. Let it cool and mingle in the fridge. Enjoy the flavors melding together!
  • Heat a skillet over medium heat and add a drizzle of olive oil. Saute the onion until tender and translucent, around 5 minutes. Add the shrimp and lime mixture, then cook until the shrimp are pink and cooked through, about 3 minutes. Remove the mixture from the skillet.
  • Layer the shrimp mixture and Mexican cheese between two tortillas to assemble the quesadillas.
  • Warm tortillas in a skillet over medium-low heat until cheese is melted and tortillas are crispy, for 3 to 4 minutes. Cut quesadillas into bite-sized pieces and enjoy!
