Speedy and scrumptious Shrimp Quesadillas for a crowd-pleasing Mexican feast in under 30 minutes. Serves 8 for a plentiful treat!
Ingredients:
  • 8 flour tortillas (8 to 10 inches in diameter)
  • 2 cups shredded Monterey Jack cheese with jalapeño peppers (8 ounces)
  • 1 large tomato, chopped (1 cup)
  • 1/2 cup real bacon pieces (from 2-ounce jar)
  • 1 package (4 ounces) frozen cooked salad shrimp, rinsed and thawed
Instructions:
  • Preheat a 10-inch nonstick skillet over medium-high heat. Add 1 tortilla to the skillet, then layer with 1/4 cup cheese, 1/4 cup tomato, 2 tablespoons bacon, and 1/4 of the shrimp. Sprinkle another 1/4 cup of cheese on top and cover with the second tortilla.
  • Sear until both sides are beautifully golden brown, about 1 to 2 minutes per side.
  • Continue the process two more times using the remaining ingredients. Slice each quesadilla into triangular wedges.
