Cheesy shrimp quesadilla with onions, cilantro, and creamy avocados on crispy tortillas.
Ingredients:
  • 1/4 pound of medium-small raw shrimp, peeled and deveined
  • 1/4 teaspoon chipotle powder or chili powder
  • Pinch of salt
  • Pinch of pepper
  • 1 Tbsp of lime or lemon juice
  • 2 1/2 teaspoons extra virgin olive oil (divided, 2 teaspoons and 1/2 teaspoon)
  • 1 Tbsp chopped red onion
  • 1 Tbsp chopped fresh cilantro, plus more for garnish
  • Salt and pepper
  • 2 medium-sized flour tortillas
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 avocado, sliced
  • Dollop of sour cream or crema fresca
Instructions:
  • In a small bowl, coat the shrimp with 1/4 teaspoon of chipotle powder or chile powder, a pinch of salt, a pinch of pepper, and a tablespoon of lime or lemon juice. Allow to marinate for 10 minutes, then discard any remaining juice.
  • Sear the shrimp in a cast iron skillet with a drizzle of olive oil over medium-high heat for 30 seconds on each side. Transfer the shrimp to a bowl, ensuring they are slightly undercooked as they will finish cooking later on.
  • Prepare the skillet: Wipe the skillet with paper towels, add 1/2 teaspoon of olive oil (or butter), and heat over medium-high. Place one flour tortilla on the skillet, flipping it every 10 seconds until air pockets form. Remove the tortilla and repeat with the second one. Keep the second tortilla in the pan and reduce heat to medium.
  • Assemble the quesadilla by layering grated cheese, shrimp, chopped onion, and cilantro on one tortilla. Top with the other tortilla. Cook until the cheese is melted and the tortilla is golden, then flip and toast the other side. For a quicker option, fold one tortilla over the filling like an omelette before cooking.
  • Cut the quesadilla into triangular pieces using a pizza wheel. Arrange on a plate with avocado slices and sour cream. Top with chopped cilantro and a drizzle of fresh lime juice. Enjoy!
