Mexican Whole Wheat Flour Tortillas

Versatile Mexican tortillas: great for fajitas, quesadillas, burritos, and more. Freezer-friendly and customizable filling inspired by my mom's recipe from Mexico.
Ingredients:
  • 1 cup all-purpose flour
  • 4 cups whole wheat bread flour
  • 0.5 cup shortening
  • 2 teaspoons salt
  • 1.5 cups boiling water
  • all-purpose flour for rolling
Instructions:
  • Combine 1 cup all-purpose flour, whole wheat flour, and salt in a large bowl. Use your hands to incorporate the shortening until the mixture resembles oatmeal. Create a well in the center, then pour in the boiling water. Mix well with a fork until the water is evenly distributed. Sprinkle with a little extra flour and knead until the dough is smooth and no longer sticky.
  • Shape the mixture into golf ball-sized 2-ounce balls. Arrange them on a tray and cover with a cloth. Allow to rest for at least 1 hour, or up to 8 hours.
  • Preheat a griddle or large frying pan over high heat. Roll out a tortilla on a lightly floured surface to your desired thickness. Fry each tortilla individually on the griddle for 10 seconds until bubbles form, then flip and cook for 30 seconds on each side. Roll out the next tortilla while one is cooking. Repeat for all tortillas. Store refrigerated or frozen.
