Whip up a speedy, light spinach dinner or snack using any tortilla. Spinach quickly wilts while cooking. Enjoy with salsa and sour cream.
Ingredients:
  • 2 (10 inch) whole wheat tortillas
  • 3 cups fresh spinach leaves
  • 0.66666668653488 cup shredded Cheddar cheese
  • 1 green onion, chopped
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
Instructions:
  • Preheat a large non-stick skillet over medium-high heat. Lay down one tortilla on the skillet. Sprinkle half of the Cheddar cheese evenly on top. Add spinach, green onions, garlic powder, and chili powder. Layer on the remaining Cheddar cheese and top with the second tortilla. Settle it in place.
  • Cook the bottom tortilla until it becomes slightly golden and crisp, approximately 3 minutes. To flip and cook the other side, transfer the quesadilla from the non-stick pan onto a dinner plate. Place another dinner plate on top and flip the quesadilla so the crispy side is now on top. Return the quesadilla to the pan and cook until the other side is crisp, about 3 more minutes. Transfer to a cutting board, and slice into 8 wedges for serving.
