Savory turkey and spinach lasagna with light ricotta and whole-wheat noodles.
Ingredients:
  • 9 whole-wheat lasagna noodles
  • 1 teaspoon olive oil
  • 0.5 cup chopped onion
  • 1 pound ground turkey breast
  • 3 cups tomato sauce
  • 0.5 cup sliced fresh mushrooms
  • 3 tablespoons Italian seasoning
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 6 cups chopped fresh spinach
  • 2 cups fat-free ricotta cheese
  • 0.25 teaspoon ground nutmeg
  • 2 cups shredded mozzarella cheese
Instructions:
  • Preheat your oven to 375°F (190°C).
  • 1. Boil a large pot of lightly salted water. 2. Add lasagna noodles and cook for 8-10 minutes. 3. Drain and rinse noodles with cold water.
  • In a skillet over medium heat, heat olive oil. Add onion and cook until softened, about 2 minutes. Mix in ground turkey and cook for 5 to 7 minutes, breaking up any large chunks. Add tomato sauce, mushrooms, Italian seasoning, black pepper, and garlic powder. Simmer for 2 minutes, then season to taste.
  • Mix the spinach, ricotta, and nutmeg in a spacious bowl.
  • Begin by layering 3 noodles along the bottom of a greased 9x13 inch baking dish. Top with a third of the ricotta mixture, turkey mixture, and mozzarella. Continue layering, finishing with the remaining mozzarella on top. Bake in a preheated oven for 25 minutes. Let it cool for 5 minutes before serving.
