Whip up a delicious linguine dish with turkey sausage, tomatoes, and spinach for 2 in just 30 minutes!
Ingredients:
  • 3.5 ounces linguine pasta
  • 1.5 teaspoons olive oil
  • 0.5 pound Italian turkey sausage links
  • 1 (14.5 ounce) can diced tomatoes, drained and juice reserved
  • 2 cloves garlic, minced
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons heavy cream
  • 1 cup baby spinach
  • 1 pinch salt and freshly ground black pepper to taste
Instructions:
  • Bring a large pot of salted water to a boil and cook linguine until al dente, about 11 minutes.
  • Heat oil in a heavy skillet over medium heat. Remove casings from turkey links and cook the meat in the skillet until browned, breaking it up into crumbles. This should take about 7 minutes.
  • Combine drained tomatoes and garlic in the pan. Simmer over low heat until the tomatoes break down, approximately 10 minutes. Stir in reserved tomato liquid, Parmesan cheese, and cream. Gently fold in the spinach. Drain the linguine and reserve 1/4 cup of pasta water. Incorporate pasta water into the sauce if desired. Cook and stir until the spinach wilts, for about 3 to 5 minutes. Season with salt and pepper to taste.
  • Top the drained linguine with the sauce before serving.
