Quick and flavorful linguine recipe perfect for a cozy dinner for two.
Ingredients:
  • 250g linguine
  • 1 185g can tuna in oil
  • 4 medium (about 580g) vine-ripened tomatoes, coarsely chopped
  • 60g (1/4 cup) capers, drained
  • 2 garlic cloves, crushed
  • 62.50 ml coarsely chopped fresh Continental parsley
  • 25g butter, cubed Parmesan shavings, to serve
  • Ground black pepper, to taste
Instructions:
  • Boil the pasta in a large saucepan of salted water according to the package instructions until it's perfectly al dente.
  • In the meantime, drain the tuna, setting aside 1 tablespoon of the oil. Flake the tuna into large chunks. Heat the reserved oil in a large frying pan over medium heat. Cook the tuna, tomatoes, and capers for 1 minute, stirring occasionally. Add garlic and cook for an additional minute. Remove from heat, cover, and set aside while the pasta cooks. (Refer to microwave tip if needed.)
  • After draining the pasta, place it back in the saucepan. Mix in the tomato mixture along with the parsley and butter, tossing everything together. Finish by topping with Parmesan shavings and a sprinkle of pepper. Serve right away.
