Fresh tomato sauce elevates this succulent shrimp pasta to gourmet levels.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups diced tomatoes
  • 1 cup dry white wine
  • 2 tablespoons butter
  • salt and black pepper to taste
  • 1 (16 ounce) package linguine pasta
  • 1 pound peeled and deveined medium shrimp
  • 1 teaspoon Cajun seasoning
Instructions:
  • In a large saucepan over medium heat, warm 2 tablespoons of fragrant olive oil until shimmering. Sauté the garlic for 2 minutes until aromatic. Introduce the tomatoes and wine, allowing the mixture to simmer gently for 30 minutes, stirring often. Once the tomatoes transform into a rich sauce, swirl in the butter and season generously with salt and pepper.
  • - Boil a large pot of lightly-salted water. Add linguine and cook until al dente, about 11 minutes. Drain in a colander.
  • Coat the shrimp with Cajun seasoning, salt, and pepper. Sear the shrimp in a large skillet with 2 tablespoons of olive oil until cooked through, about 5 minutes. Combine the cooked shrimp with pasta sauce and toss with linguine before serving.
