Roasted Tomato Pasta with Feta and Shrimp

Elegant shrimp linguine with fire-roasted tomato sauce, feta, and basil for a delightful date night dinner.
Ingredients:
  • 0.5 pound linguine pasta
  • 3 cloves garlic, minced
  • 12 medium shrimp, peeled and deveined
  • 1 (14.5 ounce) can fire roasted tomatoes
  • 1 tablespoon chopped fresh basil
  • salt and pepper to taste
  • 0.5 cup crumbled feta cheese
Instructions:
  • 1. Bring a generously salted pot of water to a rolling boil, then add the pasta and cook until perfectly al dente, about 8 to 10 minutes.
  • Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, sauté garlic in olive oil until fragrant. Add shrimp and cook until opaque, then stir in tomatoes and heat through. Season with basil, salt, and pepper to taste.
  • Mix the cooked and drained pasta with the sauce until well coated. Serve by sprinkling some feta on top.
