Creamy cheese and herb shrimp pasta inspired by a restaurant favorite. Deliciously satisfying.
Ingredients:
  • 1 (12 ounce) package linguine pasta
  • 0.25 pound bacon
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons chopped fresh basil
  • 3 roma (plum) tomatoes, seeded and chopped
  • 0.5 cup chopped green onions
  • 1 cup half-and-half cream
  • 0.25 cup freshly grated Parmesan cheese
  • 0.25 cup shredded Monterey Jack cheese
  • 1 pound cooked shrimp
  • 0.25 cup toasted pine nuts
Instructions:
  • Boil a large pot of salted water. Cook pasta until al dente, about 8-10 minutes. Drain.
  • In a large, deep skillet, sizzle the bacon until perfectly crispy. Drain, crumble, and keep aside.
  • In a large skillet over medium heat, heat olive oil. Saute garlic, basil, and oregano for 1 minute. Add tomatoes and green onions, saute for 3 minutes. Mix in bacon, half and half, Parmesan cheese, and Monterey Jack cheese, and melt the cheese. Lastly, stir in shrimp and cook until heated through, about 2 minutes.
  • Garnish pasta with sauce and top with pine nuts.
