Garlicky shrimp linguine with white wine and lemon.
Ingredients:
  • 1 (16 ounce) package linguine
  • 0.25 cup olive oil
  • 6 cloves garlic, minced
  • 1 pound peeled and deveined medium shrimp
  • 0.75 cup white wine
  • 0.5 cup lemon juice
  • 0.25 teaspoon crushed red pepper
  • 1 tablespoon chopped fresh basil
  • 0.5 pint grape tomatoes, halved
  • 2 tablespoons grated Pecorino Romano cheese
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Fill a large pot with salted water and bring to a boil. Add linguine and cook until al dente, stirring occasionally, for about 11 minutes. Drain in a colander and transfer to a large mixing bowl.
  • Combine olive oil and butter in a large skillet over medium heat until the butter melts. Saute garlic in the mixture for 2 to 3 minutes. Add shrimp and cook for 4 to 5 minutes, stirring occasionally. Pour in wine, lemon juice, red pepper, basil, and salt; cook for another minute. Add tomatoes and cook for 1 more minute. Remove from heat, then combine with linguine. Sprinkle Pecorino Romano cheese and parsley over pasta; toss to combine.
