Delicious low-carb shrimp scampi with spaghetti squash, a quick and satisfying paleo meal.
Ingredients:
  • 6 tablespoons olive oil, divided
  • 1 small spaghetti squash, halved and seeded
  • salt and ground black pepper to taste
  • 4 cloves garlic, minced
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 pinch red pepper flakes, or to taste
  • 0.5 lemon, zested
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a baking sheet with 2 tablespoons of olive oil. Season the spaghetti squash with salt and pepper, then place it cut side down on the prepared baking sheet.
  • Bake in the preheated oven for 40 minutes until fork-tender. Let cool until easy to handle, then use a fork to scrape the squash into spaghetti strands.
  • In a large skillet over medium-high heat, warm 4 tablespoons of olive oil. Cook garlic for about 2 minutes until fragrant. Add shrimp, season with salt, black pepper, and red pepper flakes. Saute until pink, stirring frequently, for about 5 minutes. Remove from heat, mix in spaghetti squash strands, lemon juice, and zest. Sprinkle with parsley before serving.
