Indulge in a delightful paleo shrimp scampi tonight - a delicious blend of zucchini noodles and savory garlic shrimp.
Ingredients:
  • 0.5 pound large shrimp, peeled and deveined
  • salt and freshly ground black pepper to taste
  • 2.5 tablespoons olive oil, or to taste, divided
  • 2 zucchini
  • 1 clove garlic, minced
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 lemon, zested, or to taste
  • 0.5 cup fresh spinach
  • 0.25 cup chicken broth
  • 1 tablespoon capers, drained
Instructions:
  • Gently sprinkle a touch of salt and pepper over the shrimp.
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Cook the shrimp until opaque, about 2 to 3 minutes per side. Transfer to a bowl.
  • Transform the zucchini into noodles by spiralizing it using the large shredding blade. Trim into shorter pieces for easier handling.
  • In the same skillet over medium heat, warm 1 tablespoon of olive oil. Cook zucchini noodles, garlic, 1/2 teaspoon sea salt, and 1/4 teaspoon pepper until slightly softened, 2 to 3 minutes. Add lemon zest, spinach, and chicken broth and simmer until liquid reduces by 1/4, about 5 minutes. Mix in shrimp and capers, then cook until shrimp is heated through, about 1 minute. Finish by drizzling the remaining olive oil on top.
