Smoked salmon pasta with zucchini, lemon and chives

Indulge in decadent smoked salmon pasta with zucchini and chives by MasterChef Australia's Courtney Roulston.
Ingredients:
  • 300g spaghetti
  • 1 garlic clove, thinly sliced
  • 2 large zucchini, peeled into ribbons
  • 250ml thickened cream
  • 20.00 ml lemon zest, finely grated
  • 150g baby spinach leaves
  • 200g smoked salmon, sliced
  • 40.00 ml chives, finely chopped
  • 4 lemon wedges
Instructions:
  • Boil the pasta in a generously salted saucepan for 8-10 minutes until al dente, then drain and set aside.
  • Heat half of the oil in a non-stick frying pan over medium heat. Add garlic and zucchini and cook, stirring, for 1 minute until almost tender.
  • Bring cream to a boil, then simmer until sauce thickens slightly. Add pasta and three-quarters of the lemon zest, toss to warm through, and set aside.
  • Heat the rest of the oil in a non-stick pan, then sauté the spinach with a pinch of salt until wilted, which should take about 1-2 minutes.
  • Portion the pasta into serving bowls. Sprinkle spinach on top and arrange smoked salmon slices, chives, and remaining lemon zest. Accompany with lemon wedges for serving.
