Smoked Salmon Pasta with Scotch

Creamy Scotch-infused reduction sauce over tender smoked salmon - bursting with flavor!
Ingredients:
  • 1 (16 ounce) package dry penne pasta
  • 1 medium onion, finely chopped
  • 2 cups fish stock
  • 2 cups white wine
  • 3 tablespoons Scotch whiskey
  • 0.5 pound chopped smoked salmon
  • 2 cups heavy cream
  • freshly ground black pepper to taste
  • 0.5 cup grated Parmesan cheese for topping
  • 1 bunch Italian flat leaf parsley, chopped
Instructions:
  • 1. Bring a large pot of water to a gentle boil seasoned with a pinch of salt. Add penne pasta and cook until just tender, about 8 to 10 minutes. Drain well.
  • In a skillet over medium heat, sauté the onion in olive oil until tender. Add the fish stock and white wine, simmer until reduced by half.
  • Take the skillet off the heat and add the Scotch whiskey. Ignite the Scotch using a long match, then let the flame die down. Put the skillet back on medium heat and add the salmon. Stir in the cream and bring to a boil. Cook and stir until thickened.
  • Combine the cooked penne pasta with the salmon mixture in a large bowl. Add pepper to taste, then top with Parmesan cheese and parsley before serving.
