Creamy smoked salmon pasta with Romano cheese, peas, and mushrooms for a delicious weeknight meal.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 6 tablespoons butter
  • 0.5 onion, finely chopped
  • 2 tablespoons all-purpose flour
  • 2 teaspoons garlic powder
  • 2 cups skim milk
  • 0.5 cup grated Romano cheese
  • 1 cup frozen green peas, thawed and drained
  • 0.5 cup canned mushrooms, drained
  • 10 ounces smoked salmon, chopped
Instructions:
  • Prepare all your fresh, quality ingredients.
  • 1. Boil generously salted water in a large pot. Cook penne until al dente, about 11 minutes, stirring occasionally. Drain well.
  • In a large skillet over medium heat, melt butter until it sizzles. Sauté onion until tender, about 2-3 minutes. Add flour and garlic powder to onion mixture and stir well.
  • Slowly incorporate the milk into the mixture and heat it until it's just about to boil. Gently blend in the cheese until the sauce is silky. Add in the peas and mushrooms, and simmer on low heat until everything is warmed through, for approximately 4 minutes.
  • Add the smoked salmon to the skillet and heat it for approximately 2 minutes until warmed. Serve the salmon over the pasta.
