Elegant pasta dish that's easy and fast to make.
Ingredients:
  • 135g (1 1/2 cups) coarsely grated gruyere cheese
  • 82.50 ml chopped fresh continental parsley
  • 2 tsp ground black pepper
  • 6 green shallots
  • 500g fettuccine
  • 1 600ml carton thin cream
  • 250mls (1 cup) dry white wine
  • 1 small garlic clove, thinly sliced
  • 2.40 gm salt
  • 200g smoked salmon, cut into 1cm wide strips
Instructions:
  • Mix the cheese, parsley, pepper, and lemon zest in a small bowl and set it aside. Slice the green shallots into 5cm lengths, then halve lengthwise and cut into thin strips.
  • Boil the fettuccine in a large pot of salted water according to the package instructions until just tender. Drain and keep warm by covering in the pot.
  • In a large frying pan over high heat, combine cream, wine, and garlic. Bring to a boil, then reduce heat to medium. Simmer uncovered, stirring occasionally, for 8 minutes. Add green shallots and simmer for an additional 2 minutes until sauce thickens slightly. Remove from heat and stir in salt.
  • Combine the sauce with the fettuccine in a saucepan, mixing well. Add the smoked salmon and half of the cheese mixture, toss thoroughly. Taste and adjust seasoning as needed. Serve the pasta on warmed plates or bowls with the remaining cheese mixture on the side.
