Fettuccine in creamy vodka sauce with smoked salmon, topped with caviar and Parmesan.
Ingredients:
  • 0.25 cup butter
  • 1 tablespoon finely chopped onion
  • 1 tablespoon fresh minced garlic
  • 0.25 pound smoked salmon, cut into thin strips
  • 1 large tomato, diced
  • 3 tablespoons vodka
  • 2 cups heavy whipping cream
  • 1.5 pounds dry fettuccine pasta
  • 2 tablespoons black caviar
  • 0.66666668653488 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a saucepan or wok over medium heat, melt butter until sizzling. Sauté onion until translucent, around 5 minutes. Stir in garlic until aromatic, about 1 minute. Introduce salmon and tomato, then season generously with salt and pepper.
  • Turn up the heat and cook while stirring for 2 minutes. Add vodka and simmer until liquid reduces by half, for 3 to 5 minutes. Then pour in cream and simmer until liquid reduces by half again for 3 to 5 minutes. Season with salt and pepper to taste.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook the fettuccine until al dente, about 8 minutes. Drain and toss with sauce until well coated.
  • Sprinkle with caviar and freshly grated Parmesan cheese, then garnish with chopped parsley before serving.
