Creamy seafood fettuccine ready in 25 minutes, perfect with canned tuna for a unique pantry dish.
Ingredients:
  • 375g Fettuccine
  • 1 bunch asparagus, woody ends trimmed, thinly sliced diagonally
  • 150g snow peas, thinly sliced
  • 120g pea
  • 2 spring onions, thinly sliced
  • 300ml light thickened cream
  • 46.80 gm wholegrain mustard
  • 1 tsp horseradish cream
  • 1 lemon, zested, juiced
  • 185g pkt hot-smoked salmon, flaked
  • 62.50 ml coarsely chopped dill
Instructions:
  • Boil the pasta until al dente according to package instructions. Add asparagus, snow peas, and peas, cook for another minute until veggies are vibrant and tender. Drain pasta and vegetables thoroughly.
  • Heat a large frying pan over medium heat. Cook spring onion until softened, then simmer with cream. Stir in mustard, horseradish, and lemon juice until sauce thickens slightly, 2-3 minutes.
  • Combine the pasta mixture, salmon, and dill with the sauce in the pan, gently toss until well mixed. Take it off the heat, season to taste, and sprinkle with lemon zest.
